Monitoring of quality and storage time of unsealed pasteurized milk by voltammetric electronic tongue

A voltammetric electronic tongue (VE-tongue) was self-developed and applied to monitor the quality and storage time of unsealed pasteurized milk. The VE-tongue comprised four working electrodes: gold, silver, platinum, and palladium electrode.

利用电子鼻鉴别模拟金锣鸡肉肠风味香精与金锣鸡肉肠的风味差别。运用电子鼻采集两样品的香气轮 廓,得到电子鼻传感器的响应值,并通过主成分分析和统计质量控制分析多元统计方法进行数据分析。结果表 明:金锣鸡肉肠和模拟金锣鸡肉肠风味香精之间风味存在差别,调配香精工作需进一步改善,更好的模拟鸡肉 肠风味。

Sensory based quality control utilising an electronic nose and GC-MS analyses to predict end-product quality from raw materials

The objective of the present study was to investigate if an electronic nose, comprising six metal oxide sensors (MOS) could predict the sensory quality of porcine meat loaf, based on measuring the volatiles in either the raw materials or the meat loaf produced from those raw materials.
